Information of Yeast Extract

 

Yeast that is used for making bread and beer, is also used in making yeast extract. This food flavoring agent is added to soy sauce, cheese and allied products for giving them a savory flavor. Umami is a term that describes the taste created by yeast extract.  It is also added to salty snacks, frozen dinners, canned stews and soups.


Yeast Extract Powder is a natural biological preparation manufactured by spray drying of autolyzed Brewer Yeast

manufactured by complete autolysis i.e a transformation of proteins into peptides and amino acids, implemented

through the enzymes present in the yeast. Beside peptides and amino acids, Yeast Extract also contains water-soluble

vitamins i.e., B1-B2-B6, carbohydrates, purine and pyrimidine bases.
